Executive Sous Chef
We are seekinga highly skilled and experienced Executive Sous Chef to join our culinary team in Surabaya, East Java. About the Role
The Executive Sous Chef is a senior leadership position within the kitchen hierarchy. You will be responsible for the day-to-day management of all culinary operations, working closely with the Executive Chef to maintain consistency and excellence. This position demands a blend of creative culinary talent, strong leadership abilities, and meticulous operational oversight. Your primary focus will be on driving performance, fostering a positive and productive kitchen environment, and ensuring all food-related activities align with the company's standards and vision.
Key Responsibilities
* Develop and execute innovative menus that align with the restaurant's concept and target audience.
* Oversee all food preparation, cooking, and plating to ensure consistency, quality, and presentation meet established standards.
* Manage kitchen staff, including scheduling, training, mentoring, and performance evaluation.
* Monitor food costs, inventory levels, and purchasing to maintain profitability and minimize waste.
* Ensure strict adherence to all food safety, sanitation, and hygiene regulations (HACCP).
* Lead kitchen operations during service, managing workflow and resolving any issues promptly.
* Collaborate with the Executive Chef on menu development, recipe creation, and cost analysis.
* Maintain accurate records related to food production, inventory, and staff management.
Requirements
* Proven experience as an Executive Sous Chef or similar senior culinary leadership role, preferably within a high-volume or upscale establishment.
* Extensive knowledge of diverse culinary techniques, menu planning, and food cost control.
* Demonstrated ability to lead, motivate, and develop a team of kitchen staff.
* Strong understanding of food safety regulations and HACCP principles.
* Excellent organizational skills and the ability to manage multiple priorities effectively.
* Creative flair and a passion for culinary excellence.
* Ability to work efficiently and maintain composure under pressure during peak service periods.
* Relevant culinary qualifications or extensive hands-on experience.
