We areseeking a dedicated Commis III to join our culinary team in Bali, supporting the Food and Beverage operations of a dynamic kitchen environment. This entry‑level position offers hands‑on experience in food preparation and presentation, contributing to the delivery of high‑quality dishes for our guests.
About the Role
The Commis III works under the supervision of senior chefs, assisting in the execution of daily kitchen tasks. The role emphasizes precision in ingredient handling, adherence to standardized recipes, and efficient workflow management to maintain consistent service standards and guest satisfaction.
Key Responsibilities
- Prepare ingredients for cooking by portioning, chopping, and storing food items according to recipe specifications, ensuring consistency and quality.
- Wash, peel, and trim fresh fruits and vegetables, maintaining strict hygiene standards and preserving freshness.
- Weigh, measure, and mix ingredients accurately to support menu production and recipe scaling.
- Maintain organized storage areas, rotate stock, and monitor inventory levels of key ingredients, reporting discrepancies to the head chef.
- Assist in receiving and inspecting deliveries of produce and supplies, verifying quality and correct quantities.
- Prepare sauces, emulsions, and basic stocks as needed, following established recipes and safety protocols.
- Execute portion control to ensure consistency, cost efficiency, and compliance with plating standards.
- Support line cooks in plating and garnishing dishes with attention to detail and visual appeal.
- Follow sanitation protocols, keep workspaces clean and compliant with health regulations, and participate in cleaning schedules.
- Collaborate with the culinary team to anticipate ingredient needs, streamline preparation, and respond to service demands.
Requirements
- High school diploma or equivalent culinary training is preferred, with basic knowledge of kitchen operations and food safety practices.
- Ability to work efficiently in a fast‑paced environment, manage multiple tasks, and maintain attention to detail.
- Strong communication skills, a willingness to learn, and a commitment to teamwork.
- Reliability and punctuality in attendance, with flexibility to work varying shifts, including weekends and holidays.
