PT Sambal Bakar Indonesia is seeking a highly skilled and experienced Executive Chef to join our team in Jakarta. **About the Role**
The Executive Chef will be responsible for overseeing all kitchen operations, ensuring the highest standards of food quality, safety, and presentation. You will lead a team of chefs and kitchen staff, manage inventory and procurement, develop menus, and maintain a positive and productive work environment. This role requires a strategic thinker with strong leadership skills and a proven track record in managing complex culinary operations.
**Key Responsibilities**
* Develop and implement innovative menus that align with the company's culinary vision and customer preferences.
* Oversee daily kitchen operations, including food preparation, cooking, plating, and service, ensuring consistency and quality.
* Manage kitchen staff, including recruitment, training, scheduling, performance evaluation, and fostering a collaborative team culture.
* Monitor food costs, inventory levels, and purchasing to ensure efficient operations and profitability.
* Maintain strict adherence to food safety and sanitation regulations, implementing and enforcing HACCP protocols.
* Conduct regular quality checks on all dishes and kitchen equipment.
* Collaborate with other departments (e.g., Front of House, Events) to coordinate service and special requests.
**Requirements**
* Minimum of 5 years of progressive experience in a senior culinary role, preferably within a high-volume restaurant, hotel, or similar establishment.
* Proven experience in menu development, recipe creation, and cost control.
* Strong leadership skills with the ability to motivate, train, and manage a diverse kitchen team.
* Extensive knowledge of food safety standards, sanitation practices, and HACCP principles.
* Excellent communication and interpersonal skills.
* Culinary degree or equivalent professional experience is highly desirable.
* Ability to work efficiently and effectively under pressure in a fast-paced environment.
* Strong problem-solving abilities and decision-making skills.
