You will work closely with the Executive Chef and Sous Chefs to support the smooth running of the kitchen, focusing on the efficient and skilled preparation of meats. Your expertise will be crucial in maintaining the highest standards of food safety, hygiene, and presentation, directly impacting the satisfaction of our guests and colleagues.
**Key Responsibilities**
* Oversee the daily butchery operations, including breaking down, trimming, portioning, and preparing premium cuts of meat according to Hilton standards and recipes.
* Ensure all meat products are stored correctly, rotated efficiently, and maintained at optimal quality and freshness.
* Maintain a clean, organized, and safe work environment within the butchery section, adhering strictly to all food safety and hygiene regulations.
* Assist in the preparation of mise en place for the kitchen brigade, ensuring all necessary ingredients are readily available.
* Contribute to the training and development of junior butchery staff, sharing knowledge and best practices.
* Collaborate effectively with other kitchen departments to ensure seamless service and guest satisfaction.
**Requirements**
* Proven experience as a Chef de Partie or similar role within a high-volume kitchen environment, with specific expertise in butchery.
* In-depth knowledge of meat cuts, preparation techniques, and butchery equipment.
* Strong understanding of food safety standards (HACCP) and strict adherence to hygiene protocols.
* Ability to work efficiently and calmly under pressure in a fast-paced kitchen environment.
* Excellent communication and teamwork skills to collaborate effectively within the kitchen brigade.
